Nancy Zieman's Banana Bread

As you know, our friend Nancy Zieman has been battling cancer.  I am very happy to report that she is doing great.  She taught at Nancy's Sewing Weekend (Mother's Day weekend in Beaver Dam)...and will be attending Spring Quilt Market next week in Salt Lake City.

In the hope that this Spring will be the beginning of a new chapter of FEELING BETTER...and getting BACK TO NORMAL...(whatever Normal is..)...I'd like to thank Nancy ford all her great sewing advice over the years...

AND, also -- the cooking...

Nancy Zieman’s A–Z Quick Bread Recipe (most delicious)

Blend together:
3 eggs
1 cup canola oil
1 cup sugar
1 tsp. vanilla

Add:
1 tsp. baking powder
1 tsp. baking soda
 2 tsp. cinnamon
 3 cups all-purpose flour

Add:
2 cups of “A–Z”
 Such as: unsweetened applesauce, mashed bananas,  shredded carrots or zucchini, shredded.
“N” for nuts is optional

Nancy Note: For moist bread, use 1 cup of applesauce and 1 cup of another fruit or veggie.

Pour into two loaf pans and bake at 350 degrees for 50–55 minutes
